Pork rib racks are the least meaty of pork ribs, but popular for the tender-chewy texture they can attain with properly long and slow cooking. Perfect for marinating or using a spice rub, then slow cooking before flash frying on the barbecue to brown.
Slow-grown, heritage pork grown on our farm on the Central Coast. These pigs live outside, are moved regularly onto new ground and enjoy a diverse diet of bugs, worms, roots, grass and their daily ration of grains.
